His elegantly-crafted composition earns its preciousness with sweet licorice notes of thyme, smoky fragrance of cardamom, and a burst of fresh blackberry fruit. Tart citrus balances the sweetness of honey in Mr. Zvi’s textural chef-d’oeuvre, while fresh sprigs of thyme coax out the plucky, herbal edge of juniper-forward gin.
Ingredients:
2 ounces gin
1 ounce herb-infused honey*
1 ounce blackberry syrup**
1 ounce fresh-squeezed lemon juice
2 drops Angostura bitters
2 sprigs thyme, for garnish
Method:
Combine gin, honey, blackberry syrup, lemon juice, and bitters with ice in a shaker. Shake vigorously and double strain into a pre-chilled cocktail glass. Garnish with sprigs of thyme.
*Combine 7 ounces of honey, 4 ounces of water, 4 sprigs of thyme, and 12 cardamom seeds in a small saucepan, and slowly bring to a boil. Remove from heat, let sit for one hour, then strain into an airtight container and chill in refrigerator.
** Lightly crush 10 ounces of fresh blackberries to release their juice. Strain juice into a small saucepan and simmer for 15 minutes. Add 3 drops of Angostura bitters and 2 drops of orange bitters. Remove from heat, let sit for one hour, then chill in refrigerator.
Yield: 1 drink
